This version clarifies quantities and method from the earlier website recipe. It makes one main serving. The small amount of orange adds flavour; this is not a carbohydrate-free recipe.
Ingredients
- 1 boneless mackerel fillet, checked carefully for bones
- 125 ml fish stock, plus water as needed
- 1 chopped celery stick
- A small piece of carrot, finely sliced
- Half a tomato, chopped
- Half a garlic clove, finely chopped
- Juice and zest from a quarter of an orange
- A small bay leaf and a few thyme leaves
- Olive oil, parsley and black pepper
Method
- Gently soften celery, carrot and garlic in a little olive oil.
- Add stock, tomato, orange and herbs. Simmer until the vegetables are tender, adding water if needed.
- Add pieces of mackerel and gently poach until fully cooked and opaque throughout. Remove the bay leaf, check again for bones and finish with parsley and black pepper.
